It’s an autoimmune disease caused by a reaction to gluten and the only treatment is a gluten-free diet, for life.

It’s likely that you know someone living on a gluten free diet. And so it may be that you need to get a gluten free Christmas gift for someone this year!

A thoughtful Christmas gift of membership. This is the national charity for those living with coeliac disease or having to avoid gluten for other reasons. It is very informative and supportive.

Handmade fudge at Christmas? Yes please!

 

Here’s a gluten free recipe for you to create your own. It’s from the national charity Coeliac UK and it’s easy!

Ingredients:

  • 1 x 397g can condensed milk
     
  • 450g demerara sugar
     
  • 115g butter
     
  • Optional: flavourings can be added after step 3. Coffee, vanilla, rum, for example.
     

Method:

  1. Place the condensed milk, demerara sugar, and butter into a large non-stick saucepan and melt over a low heat, stirring until the sugar dissolves.
     
  2. Bring to the boil then simmer for 10-15 minutes, stirring continuously and scraping the base of the pan.
     
  3. To see if it’s ready, drop a little of the mixture into a jug of ice-cold water. A soft ball of fudge should form. Alternatively, check with a sugar thermometer if you have one (the fudge should be at 118°C).
     
  4. Remove the fudge from the heat and beat until it’s very thick and starting to set (this should take about 10 minutes).
     
  5. Pour into an oiled tin and leave to cool before cutting into squares.
