Gluten Free Easter Treats

Avoiding gluten shouldn't mean missing out on delicious treats at Easter. Absolutely not!

Whatever the reason for skipping the gluten – whether you’re coeliac, gluten-intolerant or just feel better without it – we have some lovely, tried n tested recipes for you this Easter along with our gluten free Easter hampers.

Make them for yourself or for a loved one (makes a great Easter gift) and have yourselves a happy Easter!

Gluten free Easter Tiffin (Glutarama):

A great recipe for an old favourite!

Popular with all ages, this will go down well at Easter (and believe me, EVERYONE will love it!).

Makes 16 pieces.

You’ll need a 20 x 20cm square tin, loose bottomed and lined with baking paper.

Ingredients:

150g cubed butter.

50g golden syrup.

150g milk chocolate roughly chopped (make sure it’s GF of course).

200g GF shortbread biscuits broken into small pieces.

To decorate:

200g GF white chocolate.

100g GF mini eggs.

50g candied mixed peel or raisins (optional).

Method:

1.               In a large saucepan, add the chopped butter, golden syrup, and chopped milk chocolate.

2.               Heat very gently on the hob stirring constantly until the butter and chocolate has melted.

3.               Remove from the heat.

4.               Add the broken pieces of shortbread (and mixed peel/raisins if using). Fold gently to coat the biscuit trying not to break it up any smaller.

5.               Pour the chocolate mixture into the baking tin and spread to the edges with a spatula to ensure an even surface.

6.               Pop into the fridge for 5-10 mins while you melt the white chocolate (in a bowl over a pan of boiled water or in the microwave for short 15 second bursts until melted).

To decorate

1.               Take the mini eggs you plan to use and bash them with a rolling pin. Mind how hard you hit them, ideally you want them to break in half or three.

2.               Remove the tiffin base from the fridge and pour over the melted white chocolate and smooth evenly. You'll need to act quickly as the white chocolate will start to set due to the cold temperature of the tiffin base.

3.               TOP TIP: try to score the top of the tiffin to indicate portion size before adding the Easter eggs.

4.               Now take your chocolate eggs and decorate the tiffin keeping within the portion boundaries. Press the chocolate eggs into the white chocolate to ensure they stick.

This makes cutting the tiffin much easier later on.

5.               Return to the fridge to allow the topping to set completely.

Gluten free Hot Cross Buns

Being a coeliac myself, I’ve always found it hard watching others tuck into Easter treats and particularly hot cross buns!

You can, nowadays, find gf buns in supermarkets (though I find they sell out very quickly) but it’s total heaven being offered home-made ones and, thankfully, you no longer feel hard done by!!

This one is from Juvela.

Ingredients (makes 12):

150ml full fat milk

25g butter

250g Juvela Gluten Free White Mix

1/2 tsp salt

40g caster sugar

1stp dried yeast

1 medium egg, lightly beaten

50g sultanas

25g mixed peel

Zest of an orange

1/2 tsp cinnamon

For the cross and glaze:

2 tbsp apricot jam

20g Juvela Gluten Free White Mix

Method:

1.     In a small pan, bring the milk to the boil, remove from the heat and stir in the butter. Leave to cool for a few minutes.

2.    Place the Mix, salt, sugar and yeast in a large mixing bowl. Add the warm milk and egg and combine using a mixer with a dough hook (or you can mix with a wooden spoon).

3.    Transfer the dough to a lightly oiled bowl; cover with oiled cling film and allow to prove in a warm place for an hour or until roughly doubled in size.

4.    Add the sultanas, mixed peel, orange zest and cinnamon and mix into the dough with your hands.

5.     Divide the dough into approx. 8 pieces and roll into balls, place on a baking tray and allow to prove for another hour.

6.    To make the cross, combine the Mix with a little water to form a thick paste and pipe onto the top of each bun.

7.    Bake in a preheated oven 220ºC/200ºC Fan/425ºF/Gas Mark 7 for approx. 20minutes until golden.

8.    Once the buns are out of the oven, gently heat the apricot jam and brush over the top of the warm buns.
