3 Recipes For Enjoying The Summer Sun

Celebrate summer with these delicious summer recipes. With bold fruity flavours and bright colours, these dishes are perfect for enjoying outdoors in the sun.

 

Smoky Sausage Skewers With Tomato Rice (Tesco)

Easy to enjoy outdoors! It makes a great main course to share with loved ones.

Serves 8

Oven Temperature 220°C/fan 200°C/gas 7

Ingredients

  • 8-pack pork sausages
  • 2 red onions, 1 cut into 3cm chunks, 1 finely diced
  • 3 peppers, deseeded and cut into 3cm chunks
  • 2 tbsp dried oregano
  • 2 tbsp smoked paprika
  • 3 garlic cloves, crushed
  • 2 tbsp tomato purée​
  • 3 tbsp olive oil
  • 300g long-grain rice, rinsed
  • 1 chicken stock pot, made up to 700ml
  • 8 skewers (if wooden, soak in cold water before using)
  • 15g fresh coriander, finely chopped (optional)

Method

  1. Preheat the oven and line a baking tray with foil.
  2. Cut the sausages into 4 pieces each and put in a bowl with the pepper and onion chunks.
  3. Add 1 tbsp of paprika and oregano, 2 tbsp of oil, and 1 of your crushed garlic cloves. Add any additional seasoning you’d like and then toss gently to coat the sausages.
  4. Put the sausages and veg onto the skewer, preferably in an alternating pattern, and then put on the baking tray.
  5. Bake for 25-30 minutes, turning halfway through, until cooked through and a golden brown colour.
  6. While the skewers are cooking, heat the remaining oil in a lidded pan over a medium heat. Fry the diced onions until softened and add the remaining oregano, paprika, tomato purée, and garlic. Cook for two minutes.
  7. Stir in the rice until coated and then add the stock. Cover and bring to the boil. Once boiling, reduce to a simmer for about 12-15 minutes until there is no water left.
  8. Cover and set aside for 5-10 minutes.
  9. Fluff up the rice with a fork and add the coriander if desired.
  10. Serve the skewers and the rice together.

 

 

Halloumi and watermelon salad (Olive Magazine)

A surprisingly genius combination and easy to prepare! Perfect for serving as a side dish alongside a family BBQ.

Serves 8

Ingredients

  • 500g watermelon, peeled and cut into thin wedges
  • 2 tbsp olive oil
  • 2 tbsp white balsamic
  • 1 finely chopped red chilli
  • 2 x 250g packs halloumi, thinly sliced
  • A handful of shredded mint leaves

Method

  1. Begin by putting the watermelon into a large bowl.
  2. Whisk the olive oil and white balsamic together with a pinch of sea salt and then stir in the chili. Pour over the watermelon and toss. Leave to sit for 15 minutes.
  3. Dry-fry the halloumi until golden in a non-stick pan.
  4. Serve the halloumi and watermelon in a layered formation on a platter and then pour over any remaining dressing from the watermelon bowl.
  5. Sprinkle on the mint and serve!

 

Strawberry Crumble Buns (BBC Good Food)

A sweet treat! Great for enjoying at a garden party after your main course.

Serves 6

Oven Temperature 80°C/fan 160°C/gas 4

Ingredients

  • 120g butter (70g kept at room temperature and 50g chilled and cubed)
  • 370g plain flour
  • 135g caster sugar
  • 2 eggs
  • 7g dried fast action yeast
  • 250g halved strawberries
  • 100ml lukewarm milk

Method

  1. Begin by melting the 70g of room temperature butter. Once melter, leave it to cool.
  2. Sift 300g of the flower into a bowl and then add the eggs, 75g of the sugar and the yeast. Mix well with a spoon.
  3. Add the lukewarm milk and melted butter to the bowl slowly. Combine ingredients until you get a soft, sticky dough.
  4. Cover the bowl with a cloth and put it in a warm place (such as an airing cupboard) to rise for 40-60 mins. It should double in volume.
  5. While your dough is rising, make the crumble. Combine the remaining flour, sugar, and chilled butter. Rub the butter into the flour until you get a crumbly texture (like breadcrumbs). Chill.
  6. Once your dough has risen, split it into 6 balls on a floured work surface to prevent sticking. 
  7. Gently flatten the balls until they look like buns.
  8. Line a baking tray with baking paper and place your buns on it.
  9. Add the strawberries equally across the buns and sprinkle on your crumble.
  10. Bake the buns for 25 minutes until cooked and puffy.
  11. Allow to cool and dust with icing sugar.
  12. Enjoy!
